  • 2 large cucumbers, peeled and diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the diced cucumbers, halved cherry tomatoes, thinly sliced red onion, pitted and halved Kalamata olives, crumbled feta cheese, and chopped fresh parsley.
  2. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
  3. Pour the dressing over the salad ingredients.
  4. Gently toss the salad to ensure all ingredients are evenly coated with the dressing.
  5. Serve immediately or chill in the refrigerator for at least 15 minutes for the flavors to meld.
