Ingredients
Scale
2 cups cooked, shredded chicken (rotisserie chicken works well)
1 cup plain Greek yogurt (2% or full-fat recommended for texture)
1/4 cup finely chopped celery
1/4 cup halved red grapes (optional)
2 tablespoons finely chopped red onion
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh dill or parsley
Instructions
Place the shredded chicken in a medium bowl.
In a separate small bowl, whisk together the Greek yogurt, lemon juice, and Dijon mustard until smooth.
Pour the yogurt dressing over the chicken.
Add the chopped celery, red onion, salt, and pepper to the bowl.
Mix all ingredients gently until the chicken is evenly coated. Do not overmix.
Stir in the fresh dill or parsley and the halved grapes, if using.
Taste and adjust seasoning if needed.
Serve immediately or chill for at least 30 minutes for best flavor.
Notes
For a low-carb or keto option, omit the grapes and add 1/4 cup chopped pecans or walnuts.
If you prefer a tangier flavor, substitute 1/4 cup of the Greek yogurt with plain cottage cheese blended until smooth.
To make a Buffalo version, mix 1 tablespoon of hot sauce into the yogurt dressing before combining it with the chicken.
