1 cup cooked quinoa
1 cup chopped kale
1/2 cup sliced cucumber
1/2 cup halved cherry tomatoes
1/4 cup shredded carrots
1/4 cup edamame, shelled
1/4 avocado, sliced
For the Green Goddess Dressing:
1/2 cup Greek yogurt
1/4 cup fresh parsley
2 tablespoons fresh chives
1 tablespoon fresh lemon juice
1 clove garlic
Salt and pepper to taste
Instructions
Prepare the Green Goddess Dressing: Combine Greek yogurt, parsley, chives, lemon juice, garlic, salt, and pepper in a blender. Blend until smooth and creamy.
Assemble the Buddha Bowl: In a bowl, add the cooked quinoa as the base.
Arrange the kale, cucumber, cherry tomatoes, shredded carrots, and edamame over the quinoa.
Top with sliced avocado.
Drizzle generously with the Green Goddess Dressing.
