  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup grated cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil and grill for 8-10 minutes, turning occasionally, until charred in spots.
