4 (6 ounce) salmon fillets, skin on or off
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup (1 stick) unsalted butter
1/4 cup fresh lemon juice
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
Instructions
Prepare the grill for medium-high heat. Clean the grates well and lightly oil them to prevent sticking.
Pat the salmon fillets dry with paper towels. Brush both sides lightly with olive oil, then season evenly with salt and pepper.
Place the salmon skin-side down on the oiled grates. Close the grill lid.
Grill for 4 to 6 minutes per side, depending on thickness, until the internal temperature reaches 145 degrees Fahrenheit or the fish flakes easily with a fork.
While the salmon cooks, prepare the sauce. Melt the butter in a small saucepan over low heat.
Add the minced garlic to the melted butter and cook for 1 minute until fragrant. Do not brown the garlic.
Remove the pan from the heat. Stir in the fresh lemon juice and chopped parsley.
Remove the grilled salmon from the grill. Place each fillet on a plate and spoon the warm lemon butter sauce generously over the top before serving.
Notes
For moist salmon, do not overcook. Use a meat thermometer to check for 145 degrees Fahrenheit internally.
If you prefer a thicker sauce, let the butter mixture simmer gently for 2 minutes before adding the lemon juice.
