2 large eggs
1 tablespoon milk
Salt and pepper to taste
1 teaspoon butter or oil
1 large (10-inch) flour tortilla
2 ounces shredded cheddar cheese
2 ounces diced ham
Instructions
Whisk eggs, milk, salt, and pepper in a small bowl.
Melt butter or oil in a non-stick skillet over medium heat.
Pour in the egg mixture and scramble until cooked through. Remove from skillet and set aside.
Wipe the skillet clean.
Place the tortilla in the skillet and sprinkle half of it with shredded cheese, diced ham, and scrambled eggs.
Fold the other half of the tortilla over the filling.
Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
Cut in half and serve immediately.
Notes
For a spicier kick, add a pinch of red pepper flakes to the eggs.
Feel free to swap cheddar cheese for your favorite variety like Monterey Jack or a Mexican blend.
Leftover cooked bacon or sausage can be substituted for ham.
