No-Bake Chocolate and Butterscotch Haystack Cookies

Make these simple, crunchy no-bake cookie clusters using chow mein noodles, chocolate, and butterscotch chips. They require no oven time.

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • 1 cup creamy peanut butter
  • 6 cups chow mein noodles (crispy, not soft)
  • 1 teaspoon vanilla extract

Instructions

  1. Line two baking sheets with parchment paper.
  2. In a large microwave-safe bowl, combine the chocolate chips and butterscotch chips.
  3. Microwave on high for 60 seconds. Stir well. Continue microwaving in 30-second intervals, stirring after each, until the chips are completely melted and smooth.
  4. Stir the peanut butter and vanilla extract into the melted chips until fully combined.
  5. Add the chow mein noodles to the mixture. Fold gently until the noodles are evenly coated with the chip mixture. Work quickly before the mixture sets.
  6. Drop rounded tablespoons of the mixture onto the prepared baking sheets, forming small mounds or ‘haystacks.’
  7. Allow the cookies to set completely at room temperature for about 1 hour, or chill in the refrigerator for 20 minutes until firm.

Notes

  • For a different flavor, substitute the peanut butter with an equal amount of almond butter or omit it entirely for a simpler chocolate-butterscotch cluster.
  • If you prefer a firmer cookie, you can add 1/2 cup of chopped nuts along with the noodles.
  • If you do not have chow mein noodles, you can substitute them with broken pretzels or crispy rice cereal.
