  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup milk (any kind)
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the melted butter, milk, and egg to the mashed bananas and whisk until well combined.
  4. In a separate medium bowl, whisk together the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  6. Fold in the chocolate chips or chopped nuts if using.
  7. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
