These healthy blueberry yogurt muffins are moist, flavorful, and packed with protein. They make a perfect guilt-free breakfast or snack.

  • 1 ½ cups all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup plain Greek yogurt
  • ¼ cup milk
  • ¼ cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together the egg, Greek yogurt, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For best results, use room temperature Greek yogurt and egg.
  • If using frozen blueberries, do not thaw them before adding to the batter to prevent the color from bleeding.
  • Store leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
