Make healthy, nut-free granola bars. They are perfect for school lunchboxes. This recipe is easy to make in a big batch. You get a chewy, tasty, and portable snack.

  • 2 cups rolled oats (gluten-free if needed)
  • 1 cup puffed rice cereal
  • 1/2 cup dried cranberries
  • 1/2 cup pumpkin seeds
  • 1/4 cup chia seeds
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine the rolled oats, puffed rice cereal, dried cranberries, pumpkin seeds, and chia seeds. Mix well.
  3. In a separate small bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt.
  4. Pour the wet ingredients over the dry ingredients. Stir until everything is evenly coated.
  5. Press the mixture firmly and evenly into the prepared baking pan. Use the back of a spoon or a piece of parchment paper to really compact it.
  6. Bake for 25-30 minutes, or until the edges are lightly golden and the bars are set.
  7. Let the granola bars cool completely in the pan on a wire rack before cutting. This is important for them to hold their shape.
  8. Once completely cool, lift the parchment paper to remove the block of granola. Cut into 12-16 bars.
  9. Store the bars in an airtight container at room temperature for up to one week, or in the refrigerator for up to two weeks.

  • Pressing the mixture firmly helps the bars stick together.
  • Cooling completely before cutting prevents crumbling.
