  • ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup mashed ripe bananas (about 1-2 medium bananas)
  • ¼ cup maple syrup or honey
  • ¼ cup unsweetened applesauce
  • 1 large egg
  • 2 tablespoons melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped nuts (walnuts, pecans) or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, combine the rolled oats, all-purpose flour, baking soda, salt, and ground cinnamon. Whisk them together until well combined.
  3. In a separate medium bowl, mash the ripe bananas. Add the maple syrup or honey, unsweetened applesauce, egg, melted coconut oil or butter, and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix.
  5. If using, fold in the chopped nuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and serve.
