  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup or honey
  • 2 cups milk (dairy or non-dairy)
  • 1 large egg
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons brown sugar (for topping, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the rolled oats, pumpkin puree, maple syrup or honey, milk, egg, pumpkin pie spice, cinnamon, salt, and vanilla extract. Mix until well combined.
  3. Stir in the chopped pecans or walnuts, if using.
  4. Pour the mixture into the prepared baking dish.
  5. If desired, sprinkle the brown sugar evenly over the top.
  6. Bake for 30-35 minutes, or until the oatmeal is set and lightly golden brown on top.
  7. Remove from the oven and let cool for a few minutes before serving.
  8. Serve warm, optionally with an extra drizzle of maple syrup or a dollop of yogurt.
