  • 1 cup rolled oats
  • ½ cup brown sugar, packed
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 (15 ounce) can pumpkin puree
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 2 large eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with non-stick spray.
  2. In a large bowl, whisk together the whole wheat pastry flour, rolled oats, brown sugar, pumpkin pie spice, baking soda, and salt.
  3. In a separate medium bowl, whisk together the pumpkin puree, unsweetened applesauce, maple syrup, eggs, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir just until moistened. Do not overmix; a few lumps are fine.
  5. Divide the batter evenly among the 12 muffin cups.
  6. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
