This healthy zucchini bread recipe uses whole wheat flour and applesauce for a guilt-free breakfast or snack.

  • 1 ½ cups whole wheat flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup shredded zucchini (about 1 medium zucchini)
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup or honey
  • 2 large eggs
  • ¼ cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the shredded zucchini, applesauce, maple syrup (or honey), eggs, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Ensure the zucchini is well-drained to prevent a watery bread.
  • You can add ½ cup of chopped nuts or chocolate chips for extra flavor and texture.
  • Store leftover zucchini bread at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to a week.
