  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and black pepper to taste
  • 4 ounces egg noodles
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and cook until lightly browned, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. Add onion, carrots, and celery to the same pot. Sauté until vegetables are softened, about 8-10 minutes.
  3. Pour in chicken broth. Stir in dried thyme and dried rosemary. Bring the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes to allow flavors to meld.
  5. Add the cooked chicken back to the pot. Stir in the egg noodles.
  6. Continue to simmer until noodles are tender, about 5-7 minutes, or according to package directions.
  7. Season with salt and black pepper to taste.
  8. Ladle into bowls and garnish with fresh chopped parsley before serving.

  • For extra flavor, you can roast the chicken bones before making the broth.
