This hearty lentil soup is a nutritious, budget-friendly, and filling vegetarian meal. It is a thick soup packed with lentils, vegetables, and herbs, perfect for a healthy, one-pot comfort food that is ideal for meal prep.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 6 cups vegetable broth
  • 1.5 cups brown or green lentils, rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cumin
  • Salt and black pepper to taste
  • 2 cups fresh spinach, chopped (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery. Cook, stirring occasionally, for 8-10 minutes, until vegetables soften.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, rinsed lentils, dried thyme, dried oregano, and cumin. Bring the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender. Stir occasionally to prevent sticking.
  5. Season with salt and black pepper to taste.
  6. If using, stir in fresh spinach during the last 5 minutes of cooking until wilted.
  7. Ladle the soup into bowls. Garnish with fresh parsley, if desired.

Notes

  • For a smoother soup, you can use an immersion blender to blend a portion of the soup before adding spinach.
  • This soup freezes well. Store in airtight containers for up to 3 months.
  • Adjust seasoning to your preference. A pinch of red pepper flakes can add a little heat.
