  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup frozen peas
  • 1 cup frozen corn
  • Salt and black pepper to taste
  • 3 cups prepared mashed potatoes
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
  2. Add onion, carrots, and celery to the skillet. Cook for 5-7 minutes, or until vegetables begin to soften.
  3. Stir in minced garlic, thyme, and rosemary. Cook for 1 minute more, until fragrant.
  4. Pour in beef broth and diced tomatoes. Bring to a simmer, then reduce heat to low, cover, and cook for 15 minutes, allowing flavors to meld.
  5. Stir in frozen peas and corn. Season with salt and black pepper to taste.
  6. Spoon the prepared mashed potatoes over the beef and vegetable mixture, spreading evenly to cover. If using, sprinkle with shredded cheddar cheese.
  7. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the casserole is bubbly and the mashed potatoes are lightly golden.
  8. Let stand for 5 minutes before serving.
