Pat the salmon fillets dry using paper towels. This helps the crust adhere and promotes crispness.
In a small bowl, combine the panko breadcrumbs, parsley, dill, thyme, garlic powder, salt, and pepper. Mix well.
Brush the top surface of each salmon fillet lightly with Dijon mustard. The mustard acts as a binder.
Press the herb and breadcrumb mixture firmly onto the mustard-coated side of each fillet, creating an even crust.
