1 baguette, sliced into 1/2-inch rounds
3 tablespoons olive oil, plus more for brushing
1 cup crumbled feta cheese
1/2 cup sun-dried tomatoes, chopped
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh basil, chopped
Salt and black pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Arrange baguette slices on a baking sheet. Brush both sides lightly with olive oil.
Bake for 8-10 minutes, or until golden brown and crisp.
In a medium bowl, combine crumbled feta cheese, chopped sun-dried tomatoes, minced garlic, chopped parsley, and chopped basil.
Drizzle in 3 tablespoons of olive oil and mix well.
Season with salt and black pepper to your liking.
Spoon the feta and tomato mixture generously onto each toasted baguette slice.
Serve immediately and enjoy!
Notes
For extra flavor, you can add a pinch of red pepper flakes to the feta mixture.
If you don’t have fresh herbs, you can use 1 teaspoon each of dried parsley and dried basil.
Sun-dried tomatoes packed in oil will add more moisture and flavor.
