These hidden veggie meatballs are a game-changer for picky eaters. Packed with finely grated vegetables, they taste just like traditional meatballs but are much more nutritious. Perfect for a family-friendly dinner that everyone will love.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup finely grated zucchini
  • 1/2 cup finely grated carrot
  • 1/4 cup finely grated onion
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, grated zucchini, grated carrot, grated onion, breadcrumbs, Parmesan cheese, egg, oregano, garlic powder, salt, and pepper.
  3. Gently mix all the ingredients until just combined. Be careful not to overmix, as this can make the meatballs tough.
  4. Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  5. Bake for 18-20 minutes, or until the meatballs are cooked through and browned.
  6. Serve hot with your favorite sauce and sides.

Notes

  • Ensure vegetables are very finely grated to hide them effectively.
  • You can substitute ground turkey or chicken for the ground beef.
  • For softer meatballs, add a tablespoon of milk or water to the mixture.
