Ingredients
Scale
1 scoop vanilla protein powder
1/2 cup low-fat cottage cheese or Greek yogurt
2 tablespoons natural peanut butter or almond butter
1 tablespoon maple syrup or honey (optional, adjust to taste)
1/2 teaspoon vanilla extract
1/4 cup mini chocolate chips
1-2 tablespoons unsweetened almond milk (as needed for consistency)
Instructions
Place the protein powder, cottage cheese (or Greek yogurt), nut butter, maple syrup (if using), and vanilla extract into a food processor or high-speed blender.
Process the ingredients until the mixture is smooth and creamy, scraping down the sides as needed.
If the dough is too thick, add almond milk one tablespoon at a time until you reach a thick, scoopable cookie dough consistency.
Transfer the dough to a bowl and fold in the mini chocolate chips by hand.
Serve immediately or chill in the refrigerator for 30 minutes for a firmer texture.
Notes
Use a whey or casein protein powder for the best texture. Plant-based powders may require more liquid.
Adjust the sweetener based on the sweetness of your protein powder.
For a lower sugar option, use sugar-free chocolate chips.
