Ingredients
Scale
1 cup low-fat cottage cheese
2 large eggs
1/2 cup oat flour (or gluten free blend)
1 teaspoon baking powder
1/2 teaspoon vanilla extract
Pinch of salt
Cooking spray or butter for the iron
Instructions
Place the cottage cheese, eggs, oat flour, baking powder, vanilla extract, and salt into a blender.
Blend until the mixture is completely smooth. Scrape down the sides as needed. This step is key for fluffy waffles.
Preheat your waffle iron and lightly coat it with cooking spray or butter.
Pour the batter onto the hot iron according to your waffle maker’s instructions. Do not overfill.
Cook until the waffle is golden brown and firm, usually 4 to 6 minutes.
Remove carefully and serve immediately with your favorite high protein toppings.
Notes
For an extra protein boost, add 1 scoop of unflavored whey protein powder to the batter.
If you prefer a sweeter taste, add 1 tablespoon of maple syrup or a few drops of liquid stevia to the batter.
These waffles freeze well. Cool them completely, then stack with parchment paper in between and store in a freezer bag for quick meal prep breakfast options.
