Stop buying jars! Learn how to make the best homemade Alfredo sauce on the stovetop. This easy recipe delivers a rich, velvety, restaurant-style sauce using just a few quality ingredients in under 15 minutes.

Ingredients

Scale
  • 6 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 1/2 cups freshly grated Parmesan cheese (use high-quality for best results)
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Do not let the butter brown.
  2. Add the minced garlic to the melted butter and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  3. Pour in the heavy cream. Bring the mixture to a gentle simmer, stirring occasionally. Reduce the heat to low once simmering.
  4. Remove the saucepan from the heat. This step is important to prevent the cheese from clumping.
  5. Gradually whisk in the freshly grated Parmesan cheese, a handful at a time, until the cheese is completely melted and the sauce is smooth and velvety.
  6. Stir in the salt, pepper, and optional nutmeg. Taste and adjust seasoning as needed.
  7. If the sauce is too thick, add a tablespoon of reserved pasta water or milk to reach your desired consistency. If it is too thin, return to low heat for one minute, stirring constantly, until slightly thickened.
  8. Toss immediately with hot fettuccine pasta or serve over your favorite dish.

Notes

  • Always use freshly grated Parmesan cheese; pre-shredded cheese contains anti-caking agents that prevent a smooth sauce.
  • The secret to a velvety Alfredo sauce is removing the pan from the heat before adding the cheese. This prevents the sauce from becoming grainy.
  • This sauce is perfect for a quick weeknight dinner when you crave comfort food.
  • For a richer flavor, use high-quality European-style butter.
