Create a rich, velvety, restaurant-quality Alfredo sauce right in your kitchen. This simple stovetop method uses classic ingredients for a foolproof, creamy result every time.

Ingredients

  • 1 cup Heavy Cream
  • 1/2 cup Unsalted Butter (cut into cubes)
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1/2 teaspoon Salt (or to taste)
  • 1/4 teaspoon Black Pepper (freshly ground)
  • 1 clove Garlic (minced, optional for flavor)

Instructions

  1. Melt the butter in a medium saucepan over medium-low heat. If using garlic, add it now and cook for about 30 seconds until fragrant. Do not let it brown.
  2. Pour in the heavy cream. Bring the mixture to a bare simmer, stirring occasionally. Reduce the heat to low.
  3. Gradually whisk in the grated Parmesan cheese, a handful at a time. Continue whisking until the cheese is completely melted and incorporated.
  4. Season with salt and pepper. Continue to stir gently over low heat until the sauce thickens slightly to coat the back of a spoon. Do not boil the sauce once the cheese is added, as this can cause it to separate or become grainy.
  5. Remove from heat immediately. If the sauce seems too thick, you can add a splash of hot pasta water to reach your desired consistency. Serve immediately over hot fettuccine or your favorite pasta.

Notes

  • Always use freshly grated Parmesan cheese. Pre-shredded cheese contains anti-caking agents that prevent smooth melting.
  • Keep the heat low when adding the cheese to prevent the sauce from becoming grainy.
  • This sauce is best served immediately after preparation.
