  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce, plus more for drizzling
  • 1/4 cup chopped red onion
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 pre-made pizza crust or dough
  • Optional toppings: cilantro, jalapeños, ranch dressing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If using chicken breasts, place them in a pot with water and boil until cooked through, about 15-20 minutes. Alternatively, you can grill or bake the chicken.
  3. Once cooked, shred the chicken using two forks.
  4. In a bowl, combine the shredded chicken with 1/2 cup of BBQ sauce, chopped red onion, smoked paprika, garlic powder, salt, and pepper. Mix well.
  5. Place the pizza crust on a baking sheet. Brush the crust lightly with olive oil.
  6. Spread the BBQ chicken mixture evenly over the pizza crust.
  7. Sprinkle the mozzarella and cheddar cheeses over the chicken mixture.
  8. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  9. Drizzle with extra BBQ sauce and add any optional toppings before serving.

  • For a spicier pizza, add a pinch of cayenne pepper to the chicken mixture.
