Make this Ultimate Easy Homemade Reuben Bake Casserole for a comforting, cheesy, and flavorful weeknight dinner. You layer corned beef, sauerkraut, Swiss cheese, and rye bread, then bake until bubbly. It captures all the classic Reuben sandwich tastes in one simple dish.

  • 1 pound cooked corned beef, shredded or chopped
  • 1 (16 ounce) can sauerkraut, drained well
  • 1 cup Thousand Island dressing
  • 1 pound Swiss cheese, shredded (divided)
  • 8 slices rye bread, cubed
  • 1/4 cup (4 tablespoons) melted butter
  • 1 teaspoon caraway seeds (optional)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, gently toss the shredded corned beef, drained sauerkraut, Thousand Island dressing, and half of the shredded Swiss cheese. Mix until everything is coated.
  3. Spread half of the corned beef mixture evenly in the prepared baking dish.
  4. Arrange the cubed rye bread over the corned beef layer. Sprinkle with caraway seeds if you use them.
  5. Top the bread layer with the remaining corned beef mixture.
  6. Sprinkle the remaining half of the Swiss cheese evenly over the top layer.
