Make a comforting casserole that tastes just like a classic Reuben sandwich. This bake layers corned beef, sauerkraut, Swiss cheese, and dressing over rye bread cubes for an easy weeknight dinner.

  • 1 pound cooked corned beef, chopped
  • 1 (16 ounce) can sauerkraut, drained well
  • 1 cup Swiss cheese, shredded
  • 1/2 cup Thousand Island dressing
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 4 cups cubed rye bread (about 4 thick slices)
  • 4 large eggs
  • 1 cup milk
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the chopped corned beef, drained sauerkraut, shredded Swiss cheese, Thousand Island dressing, Dijon mustard, and Worcestershire sauce. Mix until all ingredients are evenly coated.
  3. Spread the cubed rye bread evenly over the bottom of the prepared baking dish.
  4. Pour the corned beef mixture over the bread cubes, distributing it evenly across the dish.
  5. In a separate medium bowl, whisk together the eggs, milk, and black pepper until blended.
  6. Pour the egg and milk mixture slowly and evenly over the casserole filling. Gently press down on the top layer to help the bread absorb the liquid.
  7. Bake for 30 to 35 minutes, or until the casserole is set, heated through, and the top is lightly golden brown.
  8. Let the bake rest for 5 minutes before cutting and serving.

Notes

  • For best results, press the sauerkraut firmly to remove as much liquid as possible before mixing it with the other ingredients.
  • You can substitute marbled rye bread for regular rye bread if desired.
  • If you prefer a crispier top, sprinkle an extra 1/4 cup of Swiss cheese on top during the last 10 minutes of baking.
