4 cups chicken broth
2 cups water
1 pound boneless, skinless chicken breasts
1 cup chopped carrots
1 cup chopped celery
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon black pepper
1 cup egg noodles
2 tablespoons chopped fresh parsley
Instructions
In a large pot, combine chicken broth, water, chicken breasts, carrots, celery, onion, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes, or until chicken is cooked through.
Remove chicken from pot and shred.
Return shredded chicken to the pot.
Add egg noodles and cook for 8-10 minutes, or until tender.
Stir in fresh parsley before serving.
Notes
For a richer broth, you can use chicken thighs instead of breasts.
Feel free to add other vegetables like peas or corn.
If you don’t have fresh parsley, dried parsley can be used as a substitute.
