  • 1 pound carrots, peeled and sliced diagonally (about 1/2 inch thick)
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Place the sliced carrots in a medium saucepan.
  2. Add just enough water to cover the carrots and a pinch of salt.
  3. Bring the water to a boil over high heat, then reduce heat and simmer for 5-7 minutes, or until carrots are tender-crisp. You want them cooked but not mushy.
  4. Drain the carrots well and set them aside.
  5. In the same saucepan, melt the butter over medium heat.
  6. Add the minced garlic and cook for about 30 seconds until fragrant. Do not let it burn.
  7. Stir in the honey and soy sauce. Whisk until the mixture bubbles and thickens slightly, about 1 minute. This creates your shiny glaze.
  8. Return the drained carrots to the saucepan.
  9. Toss gently to coat every piece evenly with the honey garlic glaze. Cook for 1-2 minutes, allowing the glaze to adhere and become sticky.
  10. Remove from heat. Taste and add a pinch of black pepper.
  11. Serve immediately while hot and glossy.
