Prepare this fast and flavorful Honey Garlic Shrimp Bowl recipe for a satisfying weeknight meal. The shrimp cooks quickly in a sticky sweet and savory sauce.

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 3 tbsp soy sauce (low sodium preferred)
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups cooked rice or quinoa (for serving base)
  • 2 cups mixed vegetables (broccoli florets, sliced carrots, snap peas)
  • 1 tbsp sesame oil
  • 2 green onions, sliced (for garnish)
  • 1 tsp sesame seeds (for garnish)

Instructions

  1. Prepare your base: Cook rice or quinoa according to package directions. Keep warm.
  2. In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, ginger, and red pepper flakes to create the sauce. Set aside.
  3. Heat the olive oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until pink. Remove shrimp from the skillet and set aside.
  4. Add the sesame oil to the same skillet. Add the mixed vegetables and stir fry for 3-5 minutes until tender-crisp.
  5. Return the cooked shrimp to the skillet with the vegetables. Pour the prepared honey garlic sauce over the shrimp and vegetables.
  6. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the shrimp evenly. Do not overcook the shrimp.
  7. To assemble the bowls, divide the cooked rice or quinoa among serving bowls. Top with the honey garlic shrimp and vegetable mixture.
  8. Garnish each bowl with sliced green onions and sesame seeds before serving immediately.

Notes

  • For meal prep, store the cooked shrimp/vegetable mixture and the rice base separately. Combine just before eating.
  • If you prefer a thicker sauce, whisk 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce during the last minute of cooking.
  • You can substitute chicken breast or tofu for the shrimp if desired, adjusting cook times as necessary.
