1 lb large shrimp, peeled and deveined
1 cup jasmine rice
2 cups water
4 cups broccoli florets
1 tablespoon olive oil
1/4 cup honey
3 tablespoons soy sauce
2 tablespoons rice vinegar
4 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch
2 tablespoons cold water
Sesame seeds, for garnish

Instructions
Cook the rice: Combine rice and 2 cups water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
Steam the broccoli: Place broccoli florets in a steamer basket over boiling water. Cover and steam for 4 to 5 minutes until tender-crisp. Set aside.
Prepare the sauce base: In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, ginger, and red pepper flakes (if using). Set aside.
Make the slurry: In a separate small bowl, whisk together cornstarch and 2 tablespoons cold water until smooth. Set aside.
Cook the shrimp: Heat olive oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 1 to 2 minutes per side until pink.
Glaze the shrimp: Pour the honey garlic sauce mixture over the shrimp. Bring to a simmer.

Notes
For meal prep, store the cooked shrimp, rice, and broccoli separately. Reheat the shrimp and rice just before eating.
You can substitute quinoa or brown rice for jasmine rice.
If you prefer a milder flavor, reduce the amount of red pepper flakes or omit them entirely.
