  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup honey
  • 1/4 cup lime juice (from about 2 limes)
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 12 small corn or flour tortillas
  • Toppings: shredded lettuce, diced red onion, cilantro, avocado slices, lime wedges

Instructions

  1. In a bowl, whisk together honey, lime juice, sriracha, soy sauce, ginger, and garlic.
  2. Add the chicken pieces to the marinade, toss to coat, and let it marinate for at least 15 minutes (or up to 2 hours in the refrigerator).
  3. Heat olive oil in a large skillet over medium-high heat.
