1 recipe for Cheddar Pie Crust
6 medium Honeycrisp apples (about 2.5 pounds), peeled, cored, and sliced 1/4-inch thick
3/4 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 large egg, beaten (for egg wash)
1 tablespoon turbinado sugar (for sprinkling)
Instructions
Prepare the Cheddar Pie Crust according to its recipe. Chill for at least 30 minutes.
Preheat your oven to 400°F (200°C).
In a large bowl, toss the sliced apples with granulated sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated.
Roll out two-thirds of the chilled pie dough and carefully line a 9-inch pie plate. Trim and crimp the edges.
Pour the apple filling into the prepared pie crust.
Roll out the remaining pie dough. You can create a lattice top or a solid top crust. If making a solid top crust, cut vents in the dough.
Place the top crust over the apple filling. Trim and crimp the edges to seal.
Brush the top crust with the beaten egg wash and sprinkle with turbinado sugar.
Place the pie on a baking sheet to catch any drips.
Bake for 20 minutes at 400°F (200°C).
Reduce the oven temperature to 375°F (190°C) and continue baking for another 30-40 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, loosely tent the pie with foil.
Let the pie cool for at least 2-3 hours before slicing and serving. This allows the filling to set properly.

For the Cheddar Pie Crust, you will need: 2 1/2 cups all-purpose flour, 1 teaspoon salt, 1 cup (2 sticks) cold unsalted butter, cut into cubes, 1 cup shredded sharp cheddar cheese, 1/2 cup ice water.
To make the Cheddar Pie Crust: In a large bowl, whisk together flour and salt. Cut in cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Stir in the shredded cheddar cheese. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix. Divide dough in half, flatten into discs, wrap in plastic, and chill for at least 30 minutes.
You can substitute other firm, tart apples like Granny Smith if Honeycrisp apples are unavailable.
Serve warm with vanilla ice cream or a dollop of whipped cream.
