Instructions
Make the Boba Pearls: Combine tapioca starch and honeydew puree in a bowl.
In a saucepan, bring water and brown sugar to a boil.
Gradually pour the hot syrup into the starch mixture, stirring until a dough forms.
Knead the dough on a floured surface until smooth.
Roll the dough into small balls.
Boil the boba pearls in water for 5-7 minutes, then drain.
Prepare the Matcha Milk: Whisk together milk, matcha powder, honeydew syrup, and sweetener until smooth.
Assemble the Drink: Fill glasses with cooked boba pearls and ice.
Pour the matcha milk over the boba and ice.
