Make authentic, flavorful hot and sour soup at home quickly. This recipe balances spicy heat with tangy vinegar for a takeout-quality experience.

  • 6 cups chicken or vegetable broth
  • 1/2 cup sliced shiitake mushrooms
  • 1/2 cup sliced wood ear mushrooms
  • 1/2 cup sliced bamboo shoots
  • 4 ounces firm tofu, cut into small strips
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon dark soy sauce (for color)
  • 1 teaspoon ground white pepper
  • 1/2 teaspoon sesame oil
  • 1/4 cup cornstarch mixed with 1/4 cup cold water (slurry)
  • 2 large eggs, lightly beaten
  • 2 tablespoons chili oil (adjust to taste)
  • 1/2 cup shredded cooked chicken or extra tofu (optional)
  • 2 scallions, thinly sliced for garnish

Instructions

  1. Pour the broth into a large pot and bring it to a simmer over medium-high heat.
  2. Add the shiitake mushrooms, wood ear mushrooms, bamboo shoots, and tofu strips to the simmering broth. Cook for 3 minutes.
  3. Stir in the soy sauce, rice vinegar, dark soy sauce, white pepper, and sesame oil. Bring the soup back to a gentle boil.
  4. Slowly pour the cornstarch slurry into the soup while stirring constantly until the soup thickens slightly.
  5. Reduce the heat to low. Slowly drizzle the beaten eggs into the soup in a thin stream while stirring gently in one direction to create ribbons. Cook for 1 minute.
  6. Stir in the chili oil. Taste and adjust vinegar or chili oil for your preferred balance of hot and sour.
  7. Ladle the soup into bowls. Garnish with sliced scallions before serving.

Notes

  • For a vegetarian version, use vegetable broth and ensure you use tofu instead of chicken.
  • Adjust the amount of rice vinegar and chili oil to control the tanginess and spice level.
  • If you prefer a thicker soup, increase the cornstarch slurry slightly.
