6 cups fresh huckleberries
1 cup granulated sugar
1/4 cup all-purpose flour
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
Pinch of salt
1 recipe double-crust pie pastry
1 tablespoon unsalted butter, cut into small pieces
1 large egg, lightly beaten (for egg wash)
1 tablespoon coarse sugar (for sprinkling)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, gently combine the huckleberries, granulated sugar, flour, lemon juice, cinnamon, and salt. Mix until the berries are evenly coated.
Roll out one half of the pie pastry and carefully fit it into a 9-inch pie plate. Trim the edges, leaving about a 1/2-inch overhang.
Pour the huckleberry filling into the pastry-lined pie plate. Dot the top of the filling with the small pieces of butter.
Roll out the remaining pie pastry. You can either place it whole over the filling, cut vents, or create a lattice top.
Place the top crust over the filling. Trim and crimp the edges to seal, creating a decorative border.
Brush the top crust with the lightly beaten egg wash and sprinkle with coarse sugar.
Bake for 15 minutes at 400°F (200°C).
Reduce the oven temperature to 375°F (190°C) and continue to bake for an additional 40-50 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, you can cover the edges with aluminum foil.
Remove the pie from the oven and let it cool on a wire rack for at least 3-4 hours before slicing and serving. This allows the filling to set properly.
Notes
Fresh huckleberries work best for this recipe. If using frozen, do not thaw them first; add them directly to the filling mixture and you may need to add an extra tablespoon of flour.
For a perfectly golden crust, ensure your oven temperature is accurate.
Cooling the pie completely is crucial for the filling to set.
