Instructions
Combine huckleberries, 1/2 cup water, sugar, lemon juice, and salt in a medium saucepan.
Bring the mixture to a simmer over medium heat, stirring occasionally.
Cook for 10-15 minutes, or until the huckleberries soften and burst.
In a small bowl, whisk together cornstarch and 1 tablespoon cold water to create a slurry.
Pour the cornstarch slurry into the simmering huckleberry mixture, stirring constantly.
Continue to cook for 1-2 minutes, or until the sauce thickens to your desired consistency.
Remove from heat and let cool slightly before serving.
