Make this simple, refreshing Iced Pineapple Coconut Mocktail. This non-alcoholic tropical drink uses pineapple juice and coconut cream for a cool, sweet flavor perfect for summer.

Ingredients

  • 1 cup pineapple juice, chilled
  • 1/2 cup coconut cream (full fat, from a can)
  • 1/4 cup water
  • 1 tablespoon lime juice, fresh
  • 1 teaspoon simple syrup (optional, adjust to taste)
  • 1 cup crushed ice
  • Garnish: Pineapple wedges and maraschino cherries

Instructions

  1. Measure the pineapple juice, coconut cream, water, and lime juice into a blender.
  2. Add the simple syrup if you prefer a sweeter drink.
  3. Blend on high speed until the mixture is smooth and slightly frothy.
  4. Add the crushed ice to the blender and pulse a few times until the ice is incorporated and the mixture is slushy. Do not over-blend.
  5. Pour the mixture into two tall glasses.
  6. Garnish each glass with a pineapple wedge on the rim and a maraschino cherry dropped into the drink.

Notes

  • For a lighter texture, substitute half of the coconut cream with coconut water.
  • If you do not have crushed ice, use regular ice cubes and blend longer until smooth.
  • To make this a sparkling drink, omit the 1/4 cup of water and top each serving with 2 ounces of club soda or sparkling water after pouring.
