1 tablespoon olive oil
1 pound ground beef
1 large onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 cup beef broth
2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
Instructions
Set your Instant Pot to the ‘Sauté’ function. Add olive oil and ground beef. Brown the beef, breaking it up with a spoon. Drain off any excess fat.
Add the chopped onion and minced garlic to the Instant Pot. Cook until the onion is softened, about 3-5 minutes.
Stir in the crushed tomatoes, kidney beans, black beans, diced tomatoes with green chilies, and beef broth.
Add the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Season with salt and black pepper. Stir everything to combine.
Secure the lid on the Instant Pot and set the valve to ‘Sealing’.
Cook on Manual/Pressure Cook mode on High pressure for 10 minutes.
Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick release for any remaining pressure.
Open the lid carefully. Stir the chili and taste for seasoning, adjusting as needed.
Serve hot with your favorite toppings such as shredded cheese, sour cream, or chopped cilantro.
Notes
For a thicker chili, you can remove the lid after cooking and set the Instant Pot to ‘Sauté’ for a few minutes to allow some of the liquid to evaporate.
Feel free to customize the spice level by adjusting the amount of chili powder and cayenne pepper.
This chili freezes well, making it a great option for meal prep.
