Make a delicious and creamy Instant Pot Butter Chicken in just 30 minutes. This recipe is perfect for a quick and flavorful Indian meal.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to ‘Sauté’ mode. Add olive oil and chopped onion. Cook until softened, about 5 minutes.
  2. Add minced garlic and grated ginger. Cook for 1 minute until fragrant.
  3. Stir in cumin, coriander, garam masala, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  4. Add the chicken pieces to the pot. Season with salt and pepper.
  5. Pour in the crushed tomatoes. Stir to combine everything.
  6. Secure the lid and set the valve to ‘Sealing’. Select ‘Manual’ or ‘Pressure Cook’ mode on high pressure for 8 minutes.
  7. Once the cooking cycle is complete, let the pressure release naturally for 5 minutes, then perform a quick release for any remaining pressure.
  8. Carefully open the lid. Stir in the heavy cream until well combined and the sauce is creamy.
  9. Taste and adjust seasoning if needed.
  10. Serve hot, garnished with fresh cilantro.

Notes

  • For a milder flavor, omit the cayenne pepper.
  • If you don’t have an Instant Pot, you can adapt this recipe for a stovetop by simmering it for 20-30 minutes until the chicken is cooked through.
  • Serve with basmati rice or naan bread for a complete meal.
