Make a rich and creamy tomato bisque quickly using your Instant Pot. This recipe delivers classic comfort food flavor with minimal effort.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes, undrained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1 teaspoon sugar (optional, to balance acidity)

Instructions

  1. Set your Instant Pot to the Sauté function. Add olive oil. When hot, add the chopped onion and cook until softened, about 4 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant. Press ‘Cancel’ to stop the Sauté function.
  3. Pour in the crushed tomatoes, diced tomatoes (with their juice), vegetable broth, dried basil, dried oregano, salt, and pepper. Stir to combine.
  4. Secure the lid and set the vent to Sealing. Select Manual/Pressure Cook on High for 10 minutes.
  5. When the cooking time finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.
  6. Remove the lid. Use an immersion blender to blend the soup directly in the pot until smooth. Alternatively, carefully transfer the soup in batches to a standard blender and blend until smooth, returning it to the pot.
  7. Stir in the heavy cream and sugar (if using). Taste and adjust salt and pepper as needed.
  8. Set the Instant Pot to Low or Keep Warm setting for 2 minutes to heat through, stirring occasionally. Serve hot.

Notes

  • For a thicker soup, you can whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir this slurry into the soup after blending, then simmer on the Sauté setting until thickened.
  • Serve this bisque with grilled cheese sandwiches or top with fresh basil leaves and croutons.
  • If you prefer a spicier soup, add a pinch of red pepper flakes with the dried herbs.
