This Instant Pot Lentil Chili recipe is a quick and satisfying vegetarian meal. It uses your pressure cooker to combine hearty lentils with classic chili flavors, making a delicious one-pot dish that’s ready in no time.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup brown or green lentils, rinsed
  • 2 cups vegetable broth

Instructions

  1. Heat olive oil in the Instant Pot on the Sauté function. Add onion and bell peppers and cook until softened, about 5 minutes.
  2. Add garlic, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Stir and cook for 1 minute until fragrant.
  3. Stir in diced tomatoes, kidney beans, black beans, rinsed lentils, and vegetable broth.
  4. Secure the lid and set the valve to sealing. Cook on High Pressure for 10 minutes.
  5. Once cooking is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick release for any remaining pressure.
  6. Open the lid and stir the chili. Serve hot.

Notes

  • For a thicker chili, you can mash some of the beans against the side of the pot.
  • Adjust the cayenne pepper to your spice preference.
  • Garnish with your favorite toppings like shredded cheese, sour cream, or fresh cilantro.
