Make this simple, creamy corn casserole using Jiffy mix. It is a quick, budget-friendly side dish perfect for holidays or weeknight dinners.

  • 1 (8.5 ounce) box Jiffy Corn Muffin Mix
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (14.75 ounce) can creamed corn, undrained
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the Jiffy Corn Muffin Mix, whole kernel corn, creamed corn, sour cream, melted butter, and eggs. Mix until just combined. Do not overmix the batter.
  3. Pour the mixture evenly into the prepared baking dish.
  4. Bake for 45 to 55 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean.
  5. Let the casserole cool for 10 minutes before serving.

Notes

  • For a cheesy version, stir 1 cup of shredded cheddar cheese into the batter before baking.
  • If you prefer a slightly sweeter casserole, substitute the sour cream with plain Greek yogurt.
  • You can prepare this casserole up to 24 hours ahead. Cover and refrigerate, then add 10-15 minutes to the baking time if baking directly from the refrigerator.
