  • 1 (3-4 pound) boneless, skin-on turkey breast
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey breast dry with paper towels.
  3. In a small bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
  4. Rub the herb and garlic mixture all over the turkey breast.
  5. Place the turkey breast in a roasting pan.
  6. Pour the chicken broth into the bottom of the roasting pan.
  7. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the breast registers 165°F (74°C).
  8. Baste the turkey with the pan juices every 20-30 minutes during cooking.
  9. Once cooked, remove the turkey from the oven and let it rest for 10-15 minutes before slicing.

Notes

  • For an even more flavorful turkey, you can loosen the skin and spread some of the herb mixture underneath.
  • If the skin starts to brown too quickly, you can loosely tent the turkey with foil.
  • The pan juices can be used to make a simple gravy.
