1 bunch kale, stems removed and chopped
1 can (15 oz) chickpeas, rinsed and drained
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon garlic powder
Salt and black pepper to taste
1/2 cup grated Parmesan cheese
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 clove garlic, minced
Instructions
Preheat your oven to 400°F (200°C).
Pat the rinsed chickpeas very dry with a paper towel.
In a bowl, toss the chickpeas with olive oil, paprika, garlic powder, salt, and pepper.
Spread the chickpeas in a single layer on a baking sheet and roast for 20-25 minutes, or until crispy.
While the chickpeas are roasting, prepare the dressing. In a small bowl, whisk together Parmesan cheese, mayonnaise, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
In a large bowl, massage the chopped kale with a little of the dressing to tenderize it.
Add the remaining dressing to the kale and toss to coat.
Top the salad with the crispy chickpeas just before serving.
Notes
For extra crispy chickpeas, ensure they are completely dry before roasting.
You can adjust the amount of lemon juice and mustard to your preference.
Add grilled chicken or shrimp for a more substantial meal.
