4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
1 cup almond flour
1/2 cup grated Parmesan cheese, plus 1/4 cup for topping
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
2 tablespoons avocado oil or olive oil (for baking)
1 cup low-carb marinara sauce (check label for 4g net carbs or less per 1/2 cup)
4 slices fresh mozzarella cheese
Instructions
Preheat your oven to 400°F (200°C) or set your air fryer to 375°F (190°C). Lightly grease a baking sheet or the air fryer basket.
Set up a breading station: Place the eggs in one shallow dish. In a second dish, combine the almond flour, 1/2 cup Parmesan cheese, garlic powder, oregano, salt, and pepper.
Dip each pounded chicken breast first into the beaten egg, letting excess drip off.
Dredge the chicken thoroughly in the almond flour mixture, pressing gently to make sure the coating adheres well on both sides.
For Oven Baking: Place the coated chicken on the prepared baking sheet. Drizzle the tops lightly with oil. Bake for 15-18 minutes, flipping halfway through, until cooked through (internal temperature 165°F).
For Air Frying: Place chicken in the air fryer basket in a single layer, ensuring no pieces overlap. Cook for 12-15 minutes, flipping halfway, until golden brown and cooked through.
Once the chicken is cooked, spread 2 tablespoons of low-carb marinara sauce over each piece. Top with one slice of mozzarella and a sprinkle of the remaining 1/4 cup Parmesan cheese.
Return the chicken to the oven or air fryer for 3-5 minutes, or until the cheese is melted and bubbly.
Serve immediately.
Notes
To keep the crust crispy when baking, place the chicken on a wire rack set inside the baking sheet.
If you prefer a thicker crust, you can double the almond flour mixture.
