Make indulgent, low-carb chocolate-covered strawberries using keto-friendly sweeteners and dark chocolate for a perfect sugar-free treat.

  • 1 pound fresh strawberries, washed and completely dried
  • 4 ounces keto-friendly dark chocolate (85% cacao or higher, or keto chocolate chips)
  • 1 teaspoon coconut oil (optional, for smoother dipping)
  • Sweetener to taste (e.g., 1 tablespoon erythritol or monk fruit blend, if using unsweetened chocolate)

Instructions

  1. Prepare the strawberries: Gently remove the green hulls, leaving the stems intact for easy dipping. Pat the berries completely dry with paper towels; moisture prevents the chocolate from sticking.
  2. Melt the chocolate: Place the keto chocolate chips or chopped dark chocolate in a microwave-safe bowl. Add the coconut oil, if using. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is mostly melted and smooth. Alternatively, melt the chocolate using a double boiler over simmering water, stirring constantly.
  3. Stir in sweetener if needed: If your chocolate is very bitter (high cacao percentage), stir in your chosen keto sweetener until dissolved.
  4. Dip the strawberries: Hold a strawberry by the stem end. Dip it into the melted chocolate, rotating to coat about three-quarters of the berry. Allow excess chocolate to drip back into the bowl.
  5. Set the chocolate: Place the dipped strawberries onto a baking sheet lined with parchment paper or a silicone mat.
  6. Chill to set: Place the baking sheet in the refrigerator for 15 to 20 minutes, or until the chocolate coating is firm.
  7. Serve immediately or store chilled.

Notes

  • For a quick set, place the dipped berries in the freezer for 5 minutes after dipping.
  • Ensure the strawberries are completely dry before dipping; water droplets cause the chocolate to seize and become grainy.
  • If you want a very thin coating, use the double boiler method and stir the chocolate until it is very fluid before dipping.
