1 medium yellow onion, chopped
2 carrots, diced (optional, for flavor; omit for strict keto)
2 celery stalks, diced
1 lb boneless, skinless chicken breasts or thighs, cooked and shredded
4 cups chicken broth (low sodium)
1 cup heavy cream
4 oz cream cheese, cubed
1 tsp dried thyme
1/2 tsp dried rosemary
Salt and black pepper to taste
3 medium zucchini, spiralized into noodles (zoodles)
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Melt the butter or heat the oil in a large pot or Dutch oven over medium heat.
Add the chopped onion, carrots (if using), and celery. Sauté until the vegetables soften, about 5 to 7 minutes.
Pour in the chicken broth and bring the mixture to a simmer.
Stir in the shredded chicken, thyme, and rosemary. Continue to simmer for 10 minutes to allow flavors to combine.
Reduce the heat to low. Whisk in the heavy cream and the cubed cream cheese until the cream cheese is fully melted and the soup is smooth and creamy. Do not boil after adding the cream.
Season the soup generously with salt and pepper. Taste and adjust seasonings as needed.
Prepare your zucchini noodles (zoodles). If you want them firmer, add them directly to the hot soup just before serving and let them sit for 2 minutes. If you prefer them softer, add them 5 minutes before serving.
Ladle the soup into bowls, garnish with fresh parsley, and serve immediately.
Notes
To prevent the soup from becoming watery, do not add the zoodles until the very end. They cook quickly in the residual heat.
For a non-dairy version, substitute the heavy cream with full-fat canned coconut milk and omit the cream cheese, using an extra tablespoon of butter for richness.
If you use rotisserie chicken, shred it while it is still warm for easier handling.
