1.5 lb sirloin steak, cut into 1-inch cubes
2 tablespoons avocado oil
4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1/2 cup beef broth
3/4 cup heavy whipping cream
2 ounces cream cheese, cubed
1 tablespoon Dijon mustard (check for no added sugar)
1.5 teaspoons coarse ground black pepper
1/2 teaspoon salt
1/4 teaspoon onion powder
1 tablespoon fresh parsley, chopped
Instructions
Pat the steak cubes dry and season them with salt and onion powder.
Heat the avocado oil and 2 tablespoons of butter in a large skillet over medium-high heat until shimmering.
Sear the steak cubes in batches, ensuring not to overcrowd the pan, until browned on all sides. Remove the steak from the skillet and set aside.
Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Add the minced garlic and cook for 30 seconds until fragrant.
Pour in the beef broth and scrape up any browned bits from the bottom of the pan. Let the broth reduce slightly for 1 minute.
Stir in the heavy cream, Dijon mustard, and black pepper. Bring the mixture to a gentle simmer.
Add the cream cheese cubes, stirring constantly until the cheese melts and the sauce thickens slightly. This should take about 2 to 3 minutes.
Return the seared steak bites to the skillet. Toss gently to coat them completely in the creamy sauce. Cook for 1 to 2 minutes until the steak is heated through.
Remove from heat, stir in the fresh parsley, and serve immediately.
Notes
Use coarse ground black pepper for the best texture and flavor in the peppercorn sauce.
If you prefer a thicker sauce without using xanthan gum, allow the sauce to simmer uncovered for an extra minute or two until it reduces to your desired consistency.
For a richer flavor, substitute half the heavy cream with sour cream, adding it right at the end off the heat to prevent curdling.
