- 8 slices provolone cheese, thinly sliced
- 4 slices hard salami
- 4 slices capicola
- 4 slices pepperoni
- 4 slices deli ham
- 2 tablespoons Italian vinaigrette dressing (low sugar)
- 1 teaspoon dried Italian seasoning
- 1/4 cup shredded lettuce (iceberg or romaine)
- 4 thin slices tomato
- 4 thin slices red onion
- Optional: 1 tablespoon mayonnaise mixed with a dash of vinegar for extra moisture
- Lay the provolone slices flat on a clean surface. Pat them dry lightly with a paper towel to help them stick when rolled.
- In a small bowl, mix the Italian vinaigrette dressing and the Italian seasoning. If using, mix in the optional mayonnaise mixture.
- Lightly brush or drizzle about 1/4 teaspoon of the dressing mixture over the surface of each provolone slice.
- On one end of each provolone slice, layer the meats: one slice of salami, one slice of capicola, one slice of pepperoni, and one slice of ham.
- Top the meat stack with a small amount of shredded lettuce, one thin slice of tomato, and one thin slice of red onion.
- Tightly roll each slice of provolone from the filled end to the other end, creating a compact roll-up.
- Secure the roll-ups with toothpicks if necessary for serving.
- Serve immediately or chill for 15 minutes to firm up before eating.
Notes
- Use high-quality, thinly sliced deli meats for the best texture.
- If the provolone is too thick, it may crack when rolled; look for standard deli slices.
- For a party platter, arrange the roll-ups cut in half diagonally.
